Ingredients
- 4 lbs chicken thighs boneless skinless
- 2 tbs oil
- salt and pepper
- 2 mangos ripe, chopped with skin removed
- 15 oz can chopped pineapple with juice
- 2 Tbs garlic minced
- 6 talks green onion (1 bunch) chopped
- oz Very Teriyaki marinade 1 whole bottle
Instructions
- Chop chicken thighs into bite sized pieces
- Heat 2 tbs oil in pan. Add chicken when pan is hot. Spread the chicken out so that it can brown instead of steam. Season with salt and pepper. Cook for 2-3 minutes per side.
- Remove chicken and set aside on a plate.
- Deglaze pan with pineapple juice from can. Scrape bottom of pan to remove the stuck on bits of chicken and the browned areas on the pan. Use spatula to scrape the areas.
- Add 2 chopped mangos, add pineapple. If the mango is a bit firm, allow it to cook a bit (2-4 minutes) before adding the pineapple.
- Add cooked chicken, chopped green onions, and very teriyaki marinade. Cook until heated through and until the chicken is at an internal temperature of 165.
- Remove from heat and serve over rice.
Notes
- If using fresh mangos, make sure they are somewhat soft, if not soft, then cook for a bit first before adding the other ingredients.
- Canned mangos are a potential for this recipe, drain them first before using.
- Save the juice from the pineapples to deglaze the pan. This adds the right acidity and sweetness to the final dish.
- Cut the chicken into bite sized pieces.
- When cooking the chicken, if some of it sticks
- It's really important to add salt and pepper to the chicken because you need to layer the flavors. Unseasoned chicken gives an "off" flavor to the entire dish.
- We only recommend Very Teriyaki Brand of Teriyaki sauce for this recipe. If you are using any other brand, the results may differ. on link, I am an amazon affiliate and if you purchase through this link, I will receive a commission, so thank you! However, purchasing this way does not change your price. This should be available at your local grocery store and that is probably the best price.
