Ingredients
- 9 inch pie crust homemade or store-bought
Filling:
- 20 oz canned crushed pineapple
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 1/2 cup shredded coconut
- 8 oz cream cheese room temperature
- Juice of 1 lime
- zest of 1 lime
- 1 teaspoon coconut extract
Instructions
- Preheat the oven to 350 degrees F.
- Press the pie crust into a pie dish.
- Stir all pie filling ingredients together in a large bowl.
- Transfer the filling into the crust and smooth it with a spoon on top.
- Bake for 35-40 minutes.
- Let cool before slicing.
- Serve topped with ice cream.
