Sausage Breakfast Pizza

Sausage breakfast pizza is a fun twist on breakfast that your whole family will love! Savory sausage, tender vegetables and fluffy eggs are topped with cheese on a crust made from crescent roll dough for a filling and delicious breakfast.

Ingredients

  • 11 ounces refrigerated pizza dough 11-13 ounces, or you can use my homemade pizza dough
  • 1 pound ground sausage cooked & drained
  • 8 ounces diced tomatoes drained, about 1/2 a can or 1 cup diced fresh
  • 2 cups potatoes frozen, diced
  • 2 small jalapeños chopped and deseeded, optional
  • 4 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 green onions sliced
  • 2 cups cheddar cheese shredded

Instructions

  1. Preheat the oven to 350 degrees. Grease the bottom of a rimmed sheet with spray oil or line with parchment paper.
  2. Unroll or stretch the dough gently and place it on the pan. Stretch and press the dough into the edges and corners of the pan until covers the pan evenly.
  3. Place the crust into the oven and cook for 5-7 minutes or until the crust is lightly golden then remove the crust.
  4. Add sausage to a large skillet over medium heat, removing outer casing if needed. Brown the sausage for 8-10 minutes until cooked through and golden brown, then place the sausage on paper towels to remove excess oil.
  5. Cook the frozen potatoes in a skillet with some oil according to the package directions. (see notes)
  6. Top the pizza crust with ground sausage, diced tomatoes, diced potatoes and diced jalapenos (optional). Distribute the ingredients evenly on the pizza.
  7. In a medium mixing bowl crack the eggs and add the garlic powder, salt and pepper. Beat the eggs with a whisk until well mixed. Pour egg mixture evenly over the pizza.
  8. Top the pizza with shredded cheese and green onions. Cook the pizza for an additional 15-20 minutes or until the egg is cooked through. Slice the pizza into 12 pieces and enjoy.

Notes

  • We used frozen potatoes o'brian potatoes potatoes that were cubed into small pieces. These potatoes should be cooked so they are crispy before adding them to the pizza, or they can make the pizza too soggy. Cook the potatoes in a skillet for 10-12 minutes with a little oil over medium-high heat, or bake them on a pan at 350 for about 20 minutes. This is also a great way to use up leftover baked potatoes or leftover cubed potato wedges.
  • Leftover sausage can be used in this recipe. You can slice sausage links into pieces or break apart cooked sausage. If using raw ground sausage, expect it to take about 10-12 minutes extra to brown the sausage meat in a pan before adding to the pizza.
  • If using refrigerated pizza crust dough that can't be unrolled and must be stretched, allow the dough to warm up on the counter for 20 minutes. This allows the dough to warm up to be stretched.
