Ingredients

  • 4 chicken breasts sliced
  • 3 bell peppers seeds removed, sliced
  • 1 small red onion quartered
  • 3 shallots halved
  • 225 grams cherry tomatoes
  • 3 tbsp olive oil
  • 3 lime PLUS 1 for before serving
  • 1.5 tbsp Chili pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp sweet paprika
  • 1 tsp salt

Instructions

  1. Heat oven to 450F.
  2. In a large sheet pan, add the chicken breasts, bell pepper, red onion, shallots, and cherry tomatoes. Drizzle on the lime juice, olive oil, and seasoning. Using your hands, mix everything together until everything has been coated evenly. Add more olive oil as needed.
  3. Bake for 30 minutes or until the chicken has cooked through and the vegetables have crisped up. Stir halfway through if desired.
  4. Squeeze a lime on top of the fajitas before serving.
