Teriyaki Sauce - Easy Homemade
Description
The Teriyaki Sauce recipe creates a balanced sauce by mixing water and cornstarch to form a slurry, then adding soy sauce, brown sugar, grated ginger, finely minced garlic, honey, sesame oil, and mirin. Cooking the mixture on medium heat activates the thickening power of cornstarch, producing a glossy, syrupy texture that coats dishes.
Brown sugar and honey provide sweetness layered with the umami depth of soy sauce. Fresh ginger and garlic introduce sharp aromatic flavors, while sesame oil adds a subtle nutty finish. Mirin contributes mild acidity and fruity notes typical of Japanese cooking.
This sauce is versatile for marinating, glazing grilled or sautéed meats and vegetables, or as a condiment to accompany Asian-inspired dishes. The thickness can be adjusted by cooking longer or adding more cornstarch slurry.
The recipe includes guidance to store the sauce in an airtight container refrigerated for up to a week, maintaining freshness and convenience.
Ingredients
- ¼ cup water
- 3 teaspoon corn starch
- ½ cup soy sauce (low sodium or regular)
- ¼ cup brown sugar
- 1.5 teaspoon ginger (grated)
- 4 garlic finely minced, cloves
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 3 tablespoon mirin (see notes below)
Instructions
- In a small sauce pot mix together the water and cornstarch. Whisk or stir with a fork until smooth.
- Add all remaining ingredients to the sauce pot and stir to combine.
- Cook on medium heat until the mixture begins to boil and thicken.
- Cook for 5-10 minutes until it thickens and coats the back of a spoon.
- Cool and store in an air tight jar in the fridge for up to 7 days and use in your favorite recipes.
Notes
- Mirin is a Japanese sweet rice wine adding mild acidity and umami; if unavailable, substitute with 3 tablespoons water mixed with 1 teaspoon white sugar.
- Cook sauce until it thickens enough to coat the back of a spoon for ideal consistency.
- Store in an airtight container in the refrigerator for up to 7 days.
