Ingredients
- 3 ripe bananas, peeled
- 1 ½ cups plant-based milk
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
- 2 cups old-fashioned rolled oats
- 1 pint of blueberries, reserve some for garnish
- 2 cups of strawberries, thickly sliced, reserve some for garnish
- Nuts or granola for garnish (optional)

Instructions
- Preheat the oven to 350 degrees F. and grease a 9x9 baking dish.
- Place the bananas on the baking pan and mash them well. Add the plant-based milk, cinnamon, and vanilla extract. Mix well and stir in the oats.
- Fold in the berries and bake for 30 minutes.
- Remove from the oven and allow it to sit for 30 minutes.
- Serve and top with more berries and sprinkle of cinnamon.

- To adjust the consistency: Simply adjust the ratio of liquid to oats based on whether you prefer a soft, casserole-like consistency or firmer baked oatmeal bars (that you can hold in your hands).
- Adjust the sweetness: Since no eggs are in the mixture, try it before baking and add some sweetener, if preferred.
- Grease the dish well: Otherwise, the oats can stick.
- For a browner top: Broil the strawberry and blueberry baked oatmeal in the last few minutes for a crispier crust.
