For the casserole

  • 1 pound pork sausage
  • 4 cups sweet potato diced
  • 1 cup onion diced
  • 10 eggs
  • 1 teaspoon sea salt
  • 1/2 cup unsweetened cashew milk
  • 2 large Roma tomatoes, diced
  • 5 ounces baby spinach

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and spray a 9x13 inch-pan with cooking spray.
  2. Heat a large pan on medium-high and cook the sausage until no longer pink. Spread it over the bottom of the prepared pan.
  3. Cook the potatoes and onions in the pork fat left in the pan on medium heat. I like to cover the pan and stir every few minutes. Cook until they just begin to soften, about 5 minutes.
  4. Spread the potato mixture over the sausage.
  5. Whisk the eggs, salt, milk, and tomatoes together.
  6. Add the spinach to the hot pan and stir until wilted. Mix it into the egg mixture.
  7. Pour over the potatoes and bake for 30 to 35 minutes until set.
  8. Let the casserole stand for 5 minutes and serve!
