  • 300 g plain flour plus extra for dusting
  • 200 g potatoes boiled and mashed
  • 1 onion finely chopped
  • 1 green chilli finely chopped
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp chilli powder
  • salt to taste
  • Coriander chopped
  • ghee for cooking

Instructions

  1. In a large mixing bowl, combine the plain flour and a pinch of salt. Gradually add water and knead to form a soft dough. Cover and set aside for 30 minutes.
  2. In another bowl, mix together the mashed potatoes, chopped onion, green chilli, cumin seeds, garam masala, turmeric powder, chilli powder, salt, and fresh coriander leaves. Set aside.
  3. Divide the dough into equal-sized portions and roll each portion into a ball. Flatten each ball slightly and dust with flour.
  4. Take one flattened dough ball and roll it out into a small circle. Place a portion of the potato mixture in the centre.
  5. Gather the edges of the dough to enclose the filling and pinch to seal. Flatten the filled dough ball slightly.
  6. Dust the filled dough ball with flour and roll it out gently into a flatbread, ensuring the filling is evenly distributed.
  7. Heat a frying pan or griddle over medium heat. Place the rolled-out paratha onto the hot pan.
  8. Cook the paratha on one side until bubbles start to appear, then flip it over.
  9. Spread some ghee or oil on the cooked side and flip again. Press down gently with a spatula to ensure even cooking.
  10. Cook until both sides are golden brown and crispy. Repeat the process with the remaining dough balls and filling.
  11. Serve hot with yogurt, pickle, or chutney.
