This Chipotle Spaghetti is a Mexican red spaghetti with a Chipotle spaghetti sauce made with tomatoes, Chipotles in adobo sauce, and can be served as a main dish or side dish.

Ingredients
Spaghetti
- Water to fill pan
- ½ pound spaghetti noodles
- 1 teaspoon salt
- 1 lice white onion + ¼ cup grated white onion
- 4 garlic cloves separated
- 2 bay leaves
- 1 teaspoon olive oil
- 3 Tablespoons butter
- 2 teaspoons chicken bouillon
Chipotle Spagetti Sauce
- 5 roma tomatoes
- ½ teaspoon Mexican oregano
- 2 chipotle peppers canned chipotle in adobo sauce
- ½ cup Mexican cream
- ⅔ cup spaghetti water
- ¼ cup queso fresco crumbled
- 1 tablespoon cilantro chopped
Instructions
Spaghetti
- Fill a large pan with water, and heat over high heat and bring to a full boil.
- Add the slice of onion, 2 whole garlic cloves, salt, chicken bouillion, and bay leaves. Boil for 2 minutes, then add the spaghetti and cook according to the package directions. This is usually about 8 to 10 minutes. Taste a piece of spaghetti to see if it fully cooked. Discard the onion, garlic and bay leaves.
- Remove the spaghetti from the water and drain, and reserve ⅔ cup of the spaghetti water.
Chipotle Spaghetti Sauce
- While the spaghetti is cooking, bring a small pan of water to boil and add the tomatoes. Boil until the skin burst, then remove the tomatoes and place them in a blender.
- Blend the tomatoes, Mexican oregano, and chipotle peppers well, if you need to, you can add the spaghetti water to help it blend well.
- In the large saute pan, heat the olive oil and butter, then add the ¼ cup of grated white onion, and grate the 2 garlic cloves. Cook for 3 to 4 minutes, the pour the tomatoes into the pan and cook for another 5 minutes.
- Slowly pour the cream into the sauce, whisking to keep it from curdling.
- Lift the noodles into the sauce and stir to combine. Cook for 1 to 2 minutes.
- Remove from the heat and serve. Add a sprinkle of queso fresco and cilantro to the top of each plate to garnish.
