This delicious egg white quiche is made with cottage cheese, mixed vegetables, turkey bacon and cheese. It's easy to make and the perfect breakfast recipe to meal prep.

Ingredients
- 1 inch frozen pie crust I used Wholly Wholesome
- 2 cups liquid egg whites 16 oz carton
- ½ cup cottage cheese
- 1 cup finely chopped mixed vegetables I did ½ cup broccoli, ⅓ cup red pepper and ⅛ cup white onion
- ½ cup shredded low-fat cheese such as mozzarella, cheddar or feta
- 4 lices cooked turkey bacon chopped
- ¼ cup chopped fresh herbs such as parsley, basil, or chives
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Blind bake pie crust according to package instructions then preheat oven to 375°F.
- In a mixing bowl, combine the liquid egg whites and cottage cheese. Use an immersion blender to blend or blend with your regular blender.
- Add chopped vegetables, shredded cheese chopped fresh herbs, salt, and black pepper to the egg white cottage cheese mixture. Mix well to combine.
- Pour the egg white mixture into the prepared quiche dish, spreading it out evenly.
- Place the quiche dish in the preheated oven and bake for 45-55 minutes, or until the quiche is set and the edges are golden brown.
- Once cooked, remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
- Garnish with additional fresh herbs, if desired, and serve warm.
Notes
- Pie Crust – use a gluten-free pie crust to make this quiche gluten-free.
- Egg Whites – if you prefer whole eggs, you can use 5-6 large eggs instead of liquid egg whites.
- Turkey Bacon – replace turkey bacon with regular bacon, ham, or a plant-based bacon for a vegetarian version.
