Ingredients
For Salad
- 10 oz edamame beans cooked and cooled
- 1 can corn
- 1 can hearts of palm sliced
- 2 tablespoons cilantro chopped
- salt + pepper
For Dijon Vinaigrette
- 1 tablespoon Dijon mustard
- 1 1/2 tablespoons olive oil
- 1 tablespoon vinegar
- 1/2 teaspoon sugar or stevia
- Touch of pepper
Instructions
- Mix the vinaigrette ingredients together
- Add the veggies and cilantro into a bowl
- Add the vinaigrette and mix well
- Refrigerate for at least 30 minutes before serving
