A tasty side salad recipe that is made with hearts of palm, tomatoes, and avocado tossed in a simple dressing! Perfectly compliments any meal!

Ingredients
- 1/4 cup canola oil
- 2 tablespoon cider vinegar
- 2 tablespoon cilantro, chopped (feel free to omit if not a fan)
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 14.5 oz diced tomatoes, drained(canned) *you can also use fresh tomatoes in place of canned
- 14.8 oz hearts of palm, drained/sliced (jarred)
- 1 avocado, chopped
- 2 tablespoon red onion, sliced
- 1 can fiesta corn, drained
Instructions
- In a small bowl, whisk together the oil, vineagar, cilantro, lime juice, salt, and pepper.
- Add drained tomatoes (or fresh), hearts of palm, avocado, onion, and corn.
- Stir gently to combine. Serve and enjoy!
