Mango Salad- ripe juicy mangoes with jicama, cucumber, red pepper, mint, cilantro, fresh lime juice, and a sprinkle of Tajin. This refreshing simple salad is perfect for summertime or anytime!

Ingredients
- 2 ripe mangos, chopped
- 2 cups peeled and chopped jicama
- 2 cups chopped English cucumber
- 1 red bell pepper, seeds removed and chopped
- 2 scallions, sliced
- 2 tablespoons chopped cilantro leaves
- 2 tablespoons chopped fresh mint leaves
- 2 small limes
- kosher salt, to taste
- tajin, for sprinkling on salad, optional
Instructions
- In a large bowl, combine the mango, jicama, cucumber, red pepper, scallions, cilantro, and mint.
- Squeeze fresh lime juice over the salad and toss. Sprinkle with salt and Tajin, if using. Toss again.
- Serve and enjoy!
Notes
- I like to chop everything in 1/2-inch pieces. You can also cut them in matchsticks. Avocado is also great in this salad!
