  • 1 ½ cups waffle mix
  • 1 ¼ cups water or milk*
  • 1 egg
  • 2 tablespoons melted butter or oil

Instructions

Make the batter:

  1. Measure the waffle mix, without packing it tightly, and add it to a large bowl.
  2. Make a well in the middle and pour the water or milk, egg, and oil or melted butter. Use a fork to break up the egg first, and then mix with a whisk or fork until the batter is smooth. Wait 5 minutes for the batter to set -read the note below*.

Cook the pancakes:

  1. Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
  2. Immediately, pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate and cook the remaining pancakes.

Serve:

  1. Serve the pancakes warm, topped with your favorite toppings.

Notes

  • You can use milk or water to make the batter. However, if the waffle mix already includes powdered milk in the ingredients, you should definitely use water.
  • The batter texture can vary depending on the waffle mix used. I recommend watching the video for a visual of the pancake batter or cooking a single pancake to test if additional waffle mix or liquid is needed, always adding 1 tablespoon at a time.
