Ingredients
- 3 cups cooked black eyed peas (about two 15 ounce cans, rinsed and drained)
- 1 cup corn
- 1/2 cup chopped red onion
- 2 roma tomatoes , seeded and diced
- 1 cup cucumber , seeded and diced
- 3 green onions , chopped
- For the dressing:
- 1/4 cup apple cider vinegar
- Juice of 1 lime
- 2 teaspoons sugar
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons ground cumin
- 3/4 teaspoon ground coriander
- 3/4 teaspoon smoked paprika
- a few dashes of hot sauce , according to heat preference
