Ingredients

Servings
  • 1 16 oz package frozen hash browns, thawed
  • 1 cup cooked and crumbled bacon or sausage
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ¼ cup chopped green onions optional

Instructions

STEP NO.1: PREHEAT OVEN

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.

STEP NO.2: MIX INGREDIENTS

  1. In a large bowl, whisk together eggs, milk, sour cream, garlic powder, onion powder, salt, pepper, and paprika.

STEP NO.3: ASSEMBLE CASSEROLE

  1. Spread the thawed hash browns evenly in the baking dish. Sprinkle crumbled bacon over the top. Pour the egg mixture over everything, then top with shredded cheese.

STEP NO.4: BAKE

  1. Bake uncovered for 40-45 minutes, or until the eggs are set and the top is golden brown.

STEP NO.5: COOL AND SERVE

  1. Let the casserole rest for 5 minutes before slicing. Garnish with green onions if desired. Serve warm.

Notes

  • Make-Ahead Tip: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning.
  • Crispy Top: For extra crispiness, broil for 2-3 minutes after baking.
  • Substitutions: Swap bacon for sausage, ham, or a mix of both.
  • Lower-Carb Option: Use shredded zucchini or cauliflower rice instead of hash browns.
  • Spicy Crack Casserole: Add chopped jalapeños or red pepper flakes.
  • Meaty Version: Use both sausage and bacon for extra flavor.
  • Veggie Loaded: Mix in bell peppers, spinach, or mushrooms.
  • Tex-Mex Style: Add taco seasoning and top with salsa before serving.
