Ingredients
- 2 tablespoons olive oil
- 3 red potatoes in small cubes
- 1 tablespoon butter
- 1 medium zucchini cut into 1/4-inch slices
- 1 clove garlic minced
- 1 teaspoon no salt garlic herb seasoning
- 12 ounces kielbasa cut into 1/2-inch slices

- grated Parmesan cheese optional

Instructions
- In a large skillet, heat olive oil over medium high heat.
- Add the cubed potatoes.
- Cook, stirring regularly, for 10-15 minutes.
- Remove from skillet.
- Add the butter to the now-empty skillet.
- Stir in zucchini and sauté until tender crisp.
- Add garlic and seasoning, and stir in. Remove from skillet.
- Add smoked sausage, and cook, stirring regularly, until heated through, about 3 minutes.
- Return the potatoes and zucchini mixture to the skillet and stir in.
- Season with salt and pepper.
- Serve sprinkled with grated parmesan cheese, if using.
Notes
- Red potatoes: I used larger red potatoes. If using small red potatoes, you may want to add additional potatoes.
- Butter: I used salted butter. The butter adds additional flavor.
- Zucchini: There's no need to peel the zucchini before use.
- Kielbasa: Feel free to use any type of kielbasa that you like.
- Parmesan cheese: The parmesan cheese is optional.
