Ingredients

  • 1 pound carrots
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • Kosher salt to taste
  • Black pepper to taste
  • 1/4 teaspoon onion powder
  • 1 tablespoon seasoned breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • Freshly chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F. Peel the carrots and cut them into sticks approximately 3 inches long and 1/2 inch thick.
  2. Combine the garlic, salt, pepper, onion powder, and breadcrumbs in a small bowl.
  3. In a larger bowl, toss the carrot sticks with olive oil to coat them, then add the seasonings mixture and mix to combine.
  4. Transfer the carrots to a lined baking sheet and arrange them in a single layer. Sprinkle grated Parmesan cheese evenly over the carrots.
  5. Bake in the preheated oven for 25 minutes or until the carrots are tender and the cheese is golden. Sprinkle with fresh parsley when serving.
